Confirmed. The September 4 official development update places the full-game Lothaire boss at the end of Chapter II. It explains that the demo used bespoke Chapter I/VII levels. The June 8 hotfix confirms his name. Reported. PowerPyx retail coverage distinguishes the intended-loss Chapter I encounter from the Chapter II victory and uses "the Eagle-Bearer."

Reported. For the Chapter II fight, PowerPyx reports two health bars: use Fire and Pistol weak-point shots to build posture, then take the stagger opening. Dodge red unblockable attacks and clear the soldiers summoned later. These are retail observations, not a claim that the demo sequence is unchanged.
Preparation
Inference. Leave enough distance to see his weapon rather than crowding the camera. Aiming at a visible weak point is a more defensible experiment than choosing a guessed elemental weakness.
